Title: Lemon Curd

1 ½ tsp lemon zest
6 T lemon juice
1 egg + 1 egg yolk
½ cup sugar
2 T butter
In double boiler combine all ingredients except butter. Whisk until hot and frothy, about 5 minutes. Add butter. Continue whisking for 7 minutes or until mixture thickens and coats back of spoon. Remove from heat and cool.
