Title: Light Carrot Cake

2 cups sugar
4 eggs
1 tsp vanilla
1 1/3 cup oil
2 cups flour
½ tsp salt
2 tsps baking soda
2 tsps baking powder
2 tsps cinnamon
4 cups finely grated carrots
¾ cup nuts, finely chopped
Beat eggs and sugar till pale and thick. Stir in oil. Sift in dry ingredients. Fold in carrots and nuts. Bake in 350° oven for 1 hour. Can be baked in Bundt pan or a 9"x13" and a 8"x8" pan.
This is a light textured, sweeter carrot cake.
