Title: Mrs. Brock’s Burnt Sugar Cake

For burnt sugar syrup: ½ cup sugar
1/3 cup boiling water
½ cup butter
1 cup white sugar
2 eggs
1 tsp vanilla
1 cup cold water
2 cups flour
2 tsp baking powder
Place ½ cup sugar in frying pan and stirring constantly, heat it until it caramelizes and turns a deep golden brown. The darker it gets the better the cake will taste. Carefully add 1/3 cup boiling water and stir well to make the burnt sugar mixture. Cool. Cream butter, gradually beat in sugar. Beat in eggs, one at a time, then vanilla. Stir in flour and baking powder alternately with water. Add cooled burnt sugar. You can also reserve a bit of the burnt sugar and add it to a buttercream icing if desired. Mrs. Brock was a neighbour of Mom and Dad’s in Saskatchewan (and a great cook). They often played cards together and we would hang around, listening to the adults talk, waiting for lunch to be served.
