Title: Mississippi Mud Cake

¾ cup butter, melted
½ cup heavy cream
½ cup strong brewed coffee, cooled
4 eggs
1 ½ cups sugar
½ cup cocoa
1 ¾ cup sifted flour
2 tsp baking powder
½ tsp salt
1 tsp vanilla
Put ingredients in bowl and beat until smooth (2 or 3 minutes). Bake in 9"x13" or 2 - 9" round pans in 350° oven for 40 minutes.
A light chocolate cake with a fine textured crumb. It tastes amazing with a raspberry mousse in the middle and topped with chocolate ganache.
