Title: Coconut Cream Pie

2 ½ cups milk
¾ cup sugar
½ cup coconut
¼ cup cornstarch
¼ tsp salt
3 eggs, separated
2 T butter
1 tsp vanilla
½ tsp cream of tartar
In saucepan combine 2 cups of the milk and ½ cup sugar, coconut and salt. Heat. Mix cornstarch with rest of milk ( ½ cup). Whisk into hot mix mixture and cook, stirring constantly, until it boils. Beat egg yolks, gradually stir some of the hot filling into the yolks, then add the yolk mixture to the filling. Cook and stir 2 minutes more. Add butter and vanilla. Pour into pie crust. Top with meringue and brown at 400° for 5 minutes.
Meringue:
Add cream of tartar to egg whites and gradually beat in ¼ cup sugar. Beat to form stiff peaks.
