Title: Chocolate Kahlua Cheesecake

Crust:
2 cups chocolate wafer crumbs
2 T sugar
¼ cup butter, melted
Filling:
1 ½ lbs cream cheese, softened
¾ cup sugar
3 eggs
¼ cup Kahlua
1/8 cup very strong coffee
5 oz. semi-sweet chocolate, melted
Topping:
1 cup sour cream
2 T sugar
1 tsp vanilla or Kahlua
Shaved chocolate for garnish
Mix crust ingredients together and press into a 9" springform pan. Bake at 350° for 5 minutes. Cool. Beat cream cheese and sugar together until well blended. Beat in eggs, one at a time, until mixture is light and fluffy. Add Kahlua, coffee and melted chocolate and beat until smooth. Pour into crust and bake at 350° for 35-45 minutes or just until the center is almost cooked. Mix the topping ingredients together while the cheesecake is baking. When cake is done, remove from oven and spoon on topping. Bake an additional 5 to 10 minutes. Remove from oven and garnish with shaved chocolate. Let stand until well cooled. Refrigerate 8 hours or overnight before serving.
