Title: Special Pineapple Dessert

½ pkg graham wafers, rolled to crumbs
1 - 3 oz pkg pineapple jelly powder
1 cup boiling water
1 small can crushed pineapple
½ cup butter
1 ½ cups icing sugar
3 eggs
1 ½ cups whipping cream, whipped
Dissolve the jelly powder in water . Add the crushed pineapple, blend well and set aside to cool and thicken slightly. Cream butter, add icing sugar and beaten eggs. (mixture will curdle). Continue beating over hot (not boiling) water till thick and set aside to cool. Put half the graham wafer crumbs in a 9"x13" pan. Spread the butter, sugar mixture over. Over this spread the pineapple jelly mixture. Whip cream and spread over the pineapple layer. Sprinkle the rest of the crumbs over the top. Refrigerate for 8 hours or overnight. Cut into squares and, if desired, top with whipped cream and a cherry.
