Title: Lemon Pudding Cake

4 eggs, separated
1/3 cup lemon juice
1 tsp grated lemon rind
1 T butter, melted
1 ½ cups sugar
½ cup flour
½ tsp salt
1 ½ cups milk
Beat the eggs yolks, lemon juice, lemon rind and butter together. Combine the flour, sugar, and salt. Add dry ingredients alternately to the egg yolk mixture with the milk. Beat egg whites till stiff and blend into the egg yolk mixture at low speed on mixer. Pour into 8" greased square cake pan. Bake in a pan of hot water at 325° for 30-40 minutes.
When this is baked it forms a cake layer on top with a creamy lemon sauce underneath.
