Title: Spudnuts

1 T yeast dissolved in ¼ cup warm water
2 cups milk, scalded
½ cup butter or margarine
1 cup finely mashed potatoes
3 eggs
½ cup sugar
1 tsp salt
½ tsp nutmeg (optional)
7-8 cups flour
While yeast is dissolving, mix the hot milk, butter, mashed potatoes. Cool then beat in eggs, sugar, salt and nutmeg. Add yeast, then stir in 7 cups of flour to make a soft dough. If too soft, add a little more flour. Mix and let rise twice, punching down in between risings. Roll out about ¼" to ½" thick and cut into doughnuts. Let rise slightly, then fry in deep fryer. Dip immediately in glaze or gently toss in a bag of cinnamon/sugar mixture.
Glaze:
½ cup margarine
1 cup sugar
½ cup milk
1 cup icing sugar
½ tsp salt
½ tsp vanilla
Boil together and keep hot while dipping doughnuts.
