10 cups boiled, riced potatoes
1 cup shortening
2 eggs
3 cups flour
2 tsps salt
2 tsps baking powder
Mix hot potatoes and shortening. Let cool. Add remaining ingredients. Break off pieces the size of a golf ball and roll into circles about 1/8" thick. Cook on ungreased, hot skillet or cast iron pan for 1 to 2 minutes per side until lightly browned in spots. Cool on racks. To serve, spread with butter and, if desired, sprinkle with sugar. Roll.
