Title: Baked Stuffed Pacific Salmon

1 whole salmon (about 5 lbs)
Stuffing:
½ cup melted butter
¼ cup chopped onion
½ cup chopped celery
A little grated lemon rind
1 T lemon juice
¼ tsp marjoram
¼ tsp sage
1 tsp parsley
¼ tsp dill weed
pinch of dry mustard
3 cups fresh soft bread crumbs
Mix and pack into the cavity of fish. Lace together. Put fish on foil on baking sheet or flat pan. Dot with butter and bake in 400° oven for 15 to 20 minutes per pound. Baste with lemon juice and melted butter.
