Title: Swiss Steak

2 lbs round or chuck steak
2 T oil
salt and pepper
1 - 2 medium onions
¼ cup butter or margarine
¼ cup flour
1 tsp salt
¼ tsp pepper
4 cups water
Cut meat into serving size pieces. Heat oil in frying pan and brown meat on both sides. Sprinkle with salt and pepper and put into a large casserole. Peel onions and cut into chunks. Distribute over and around meat. Melt butter in frying pan. Stir in flour, salt, and pepper. Add all water all at once and stir until gravy boils. Taste for seasonings. Pour over meat and onions. Bake covered at 350° for 1 ½ - 2 hours or until meat is tender.
