Title: Spanikopita

1/3 cup olive oil
1 bunch green onions, chopped
2 pks frozen spinach, thawed and drained thoroughly
1 bunch parsley, chopped
1 bunch dill, chopped
½ lb feta cheese, crumbled
3 eggs, lightly beaten
salt and pepper to taste
1 lb phyllo pastry
1 lb unsalted butter, melted
Saute onions in olive oil until tender. Add spinach and cook 5 minutes. Stir in seasonings and cook uncovered until all liquid is absorbed. Cool until lukewarm. Add eggs and cheese to spinach mixture. Line a large pan with two phyllo leaves, and brush with melted butter. Repeat until half of the leaves are used. Spread spinach-cheese mixture over the layers, then repeat leaves-butter procedure until all leaves are used. Bake at 350F for 45 minutes or until golden brown.
