Title: Spritz Cookies

1 cup butter
¾ cup sugar
3 egg yolks
10 almonds, blanched and very finely chopped
¼ tsp almond extract
2 ½ cups sifted flour
Beat butter until creamy. Gradually beat in sugar. Beat in egg yolks, chopped almonds and flavoring. Add flour and blend thoroughly. Place dough in cookie press and using a variety of designs press dough onto ungreased baking sheets. Bake in 400° oven for 8 to 10 minutes or just until lightly browned around the edge. Cool on rack. Makes 4 dozen.
